The best guacamole recipe for National Guacamole Day

Happy National Guacamole Day! Yes, it exists, and it is officially my second favorite foodie holiday of the year (behind Cinco de Mayo, a perfect occasion for gorging not only on guac, but also queso and margaritas!).

To help celebrate this glorious occasion, Chef Mimmo Alboumeh of Red Pepper Taqueria is sharing his recipe for the perfect guacamole with Belly of the Feast! Totally cool if you want to steal it for the next happy hour you're hosting.

Speaking of happy hour: Today from 4-6 p.m., both Red Pepper Taqueria locations are offering half-priced chips & guac in honor of this wonderful holiday. But here's the trick: You have to sit at the bar to get the deal! They'll also have drink specials (throughout the entire restaurant): $3 Mexican Break shots, $3 Tecate beer and $6 margaritas. 

Red Pepper Taqueria guacamole:

Ingredients:
-3 lightly firm avocados (Calavo or Haas brand), halved, seeded, peeled
-2 tablespoons lime juice
-1/2 teaspoon kosher salt
-2 oz red onion, diced
-3 oz roma tomatoes, seeded, diced
-1 serrano pepper, finely chopped
-2 tablespoons cilantro, chopped

Directions:
In a large bowl, mash the avocados with salt and lime juice. Fold the remaining ingredients and serve with baked corn chips (Chef Mimmo prefers the β€œEl Milagro” brand).
